Ingredients

Instructions
  1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion, garlic and lemon zest, then cook, stir for 3-4 minutes until softened.
  2. Add your tomato paste and cook, stirring for 1 minute.
  3. Add the lamb mince and cook, stirring for 2-3 minutes until it’s browned.
  4. Add oregano, tomatoes and wine, then cook. Stir occasionally for 10 minutes until the sauce is thickened.
  5. Add cherry tomatoes and cook for 5 minutes or until softened and just starting to break down.
  6. Cook the spaghetti in a large saucepan of boiling salted water according to packet directions and then drain.
  7. Divide the pasta between bowls and top with the lamb sauce. Scatter with the feta, olives and mint.
