Ingredients

Instructions
  1. Preheat the oven to 180°C.
  2. Line a baking tray with non-stick baking paper.
  3. Prick the unpeeled potatoes all over with a fork, then place them in a large baking dish. Bake them for about 40 minutes.
  4. Remove the potatoes from the oven and leave the potatoes to stand for 15 minutes or until they're cool enough to touch.
  5. Cut the potatoes into quarters lengthways and scoop out some of the potato.
  6. Leave some of the potato inside the skin.
  7. Place the hollowed out potato quarters skin-side down on the baking tray.Mix the cheeses and seasoning mix in a bowl and sprinkle over potatoes.
  8. Bake for 10 minutes or until cheese is melted.Serve topped with sour cream.
